Santoku
Santoku with a 165 mm long blade (measured from tip to heel).
A thin protective layer of lacquer is applied to the blade side. One might easily think that this is related to hardening, but that is not the case. The lacquer creates a light rainbow sheen that can be easily removed with acetone if desired, although it will disappear on its own over time.

A very special knife made by Satoshi Nakagawa, one of the most skilled smiths in Sakai, Japan. After working 16 years as a smith at Shiraki, Nakagawa has become 'independent' and now decides on the design and production methods himself. He forges his blades using classic Japanese blacksmithing techniques, and the blade is of the highest possible quality. The knife has a pleasant weight and fits perfectly in the hand. The edge itself is very thin, and the knife cuts fantastically well.
